SIMPLE TURKEY SAUSAGE ZUCCHINI CORNBREAD
Using the Jiffy Corn Muffin Mix, this simple Turkey Sausage and Zucchini Cornbread recipe is delicious and filling! Its combined flavors with the sausage and onion mixed with the slightly buttery sweet cornbread and melted cheese are fantastic!
I’m a huge fan of cornbread! There are many creative ways to turn basic cornbread into a delightful dinner. This turkey sausage and zucchini cornbread dish is an example. There was nothing to it!
You can make this simple turkey sausage and zucchini cornbread as a meal or a side dish.
It only takes a few minutes to whip everything together; and, 40 minutes to bake. But it’s so worth it.
If your week will be a busy one, you can double up the recipe and have a quick meal on the go for those busy workdays.
You can refrigerate half of the cooked dish and freeze the rest for future meals or sides.
You can grab it out of the freezer, thaw, and pop in the microwave for 30 seconds to a minute, and you’ve got a delicious homemade almost-instant mini-meal.
INGREDIENTS
- 1 Box Jiffy Corn Muffin Mix
- 1 Link Chopped Turkey Sausage
- and 1 Small Diced Yellow Onion
- 1 Large Chopped or Diced Zucchini
- and 1 4 oz Can green chilies
- 1 TBSP Olive Oil
- Cooking spray for skillet
- 1 Egg
- ⅓ Cup Milk
- ¼ tsp Coarse Black Pepper
- Cheese Optional / Topping
STEP 1-4 SIMPLE TURKEY SAUSAGE ZUCCHINI CORNBREAD
1: Gather all of your ingredients. Dice and chop the sausage, zucchini, and onion. I like chunky pieces; if you don’t, dice or chop the pieces to your desired size—Preheat the oven to 400 degrees F.
2. Add the olive oil and onions to a medium heated fry pan. Then saute’ for about 5 minutes, until the onions are translucent.
3: Add the turkey sausage to the pan.
4: Add the zucchini to the pan and mix well for another 5 minutes. Remove from heat and set aside.
STEP 5-8 SIMPLE TURKEY SAUSAGE ZUCCHINI CORNBREAD
5: In a medium to a large mixing bowl, add the Jiffy Corn Muffin mix.
6: Add the egg and milk to the bowl, then whip.
7: The batter will look like this. [it will be lumpy, do not over mix]
8: Add the cooked mixture and pepper to the batter, mix for one minute.
STEP 9-12 TURKEY SAUSAGE ZUCCHINI CORNBREAD
9: Add the green chilies to the mixture and stir well.
10: Grease your muffin pan or iron skillet generously.
11: Next, Pour batter into a muffin pan or iron skillet.
12: Last but not least, bake in the oven for 40 minutes or until the cornbread is golden brown and when the toothpick comes out clean.
The edges of this simple turkey sausage zucchini cornbread have a slight crunch around the edges, which I genuinely love. The inside is not soggy or too dry; it’s just right.
HOW DO YOU REHEAT THE CORNBREAD?
MICROWAVE: I recommend warming it up in the microwave. Place a piece of the cornbread meal on a plate and place a wet/damp paper towel over the top. Microwave for 20-30 seconds. Top with butter, cheese, and black pepper.
OVEN: Place in a heated oven at 300 degrees F. oven for 10 minutes or longer for the desired temperature.
For ultimate flavor, serve this with or without the cheese. I like to put butter, cheese, and a black pepper sprinkle. YUM!
CAN YOU FREEZE THE CORNBREAD?
You can freeze the cornbread for up to 3 months.
After that, I don’t recommend it; it is more delicious right from the oven.
From the freezer, thaw in the refrigerator. To heat, place the cornbread meal on a microwave-safe dish and pop in the microwave for 30 seconds to a minute to warm it up.

- 1/4 tsp Coarse Black Pepper

Instructions
- Gather all of the ingredients. Dice or chop sausage, zucchini, and onions.
- Add olive oil and onions to a medium heated skillet or pan. Saute onions until they are translucent.
- Add the sausage to the pan.
- Add the zucchini to the pan and stirfry for 5 minutes. Remove from heat and set aside.
- In a medium bowl; add the Jiffy Corn Muffin Mix.
- Add the egg and milk to the bowl and whip.
- Don't overmix the batter, it will be lumpy.
- Add the cooked mixture, green chilies, and pepper to the batter and mix well.
- Grease a muffin pan or iron skillet generously.
- Pour batter mixture into skillet or muffin pan and bake for 40 minutes, or until golden brown.
